Legami Tipici

A journey through history, memory, and flavors to rediscover
the roots of Bisiac cuisine

Legami Tipici is a research and enhancement project exploring the deep historical and cultural connections preserved in the traditional recipes of the Bisiac area. Ancient preparations, interpreted through a historical and ethnographic lens, become valuable markers of identity, revealing social connections and cultural stratifications developed over time. From the civilization of Rome to the rule of the Republic of Venice, through the Napoleonic era and the Empire of the House of Habsburg, and including the lasting influence of neighboring Slavic populations, each period has left tangible traces on the local gastronomic heritage. These cultural contributions are still reflected today in place names, languages, literary traditions, and, most vividly, in everyday food habits.

Through a path of research, testimonies, and audiovisual documentation, the project has gathered video interviews with historians, local producers, and agronomists, resulting in an exhibition hosted at Villa Vicentini Miniussi, home of the Consorzio Culturale del Monfalconese.

Legami Tipici is promoted by the Consorzio Culturale del Monfalconese in partnership with the Associazione Culturale Bisiaca, the Accademia Italiana della Cucina (which collaborates with the project Il gusto dei saperi), the Associazione Italiana di Storia Orale, the Università degli Studi di Trieste, the Scuola di Agraria BEM, and the Museo di Documentazione della Civiltà Contadina from Farra d’Isonzo.
